Only created when the milk yield from both the sheep and cow herd is just right, this pecorino cheese is distinctly salty and robust. With low moisture this hard cheese is ideal to shave or curl over salads, pastas or pizzas to add a depth of flavour. Aged for a minimum of 36 months this cheese made from 50% sheep's milk and 50% cow's milk has a unique flavour profile which will awaken the taste buds and add character to any dish.
Made by Mercer Cheese (1 hour south of Auckland in New Zealand's North Island) by master cheese maker Albert Alferink. Mercer Cheese has been producing award winning small batch artisanal cheese from their small farm at Tuakau for over 20 years.

We recommend a wine match of a robust white (sauvignon blanc, viognier, albarino) or robust red wine (Syrah, Merlot, Malbec) to pair well with the salinity of the cheese.
