Not to be confused with Parmesan - the Parmigiano exhibits similar flavours to the nuttier Parmesan cheese. The Parmigiano exhibits a slight sweetness that cuts through the musky flavour and is supplemented with tones of nuts. A cheese with a robust character and plenty of flavour, this cheese is a hard drier cheese that can be used in both cooking and salads, but is equally at home on a cheese platter.
Made by Mercer Cheese (1 hour south of Auckland in New Zealand's North Island) by master cheese maker Albert Alferink. Mercer Cheese has been producing award winning small batch artisanal cheese from their small farm at Tuakau for over 20 years.
Ideal for pairing with a fruity paste, condiment or cured meat on baguette, oat cakes or crackers, or simply enjoyed by itself.
We recommend a wine match of a robust white wine (sauvignon, viognier, albarino) or a robust red wine (merlot, malbec, cabernet etc).
