Aged for 36 months minimum, this cheese exhibits a delightful caramel flavour which is further enhanced by formations of crystallisation in the cheese that creates pops of sweetness. Ideal for pairing with a fruity paste or condiment on baguette, oat cakes or crackers, or simply enjoyed by itself.
We recommend a wine match of a light white (chardonnay, dry riesling, viognier, albarino) or lighter red wine (Martinborough Pinot Noir).
